PS- This recipe was first posted in 2014 when I was following a low carb diet really sincerely and just when I was trying to remove a few old redundant posts I found this one. This I remember was an amazingly simple and easy thing to make in your humble microwave.

I often read about Kale chips on low carb forums and despite of looking for Kale greens everywhere here in India, I failed. But then I once again proved to myself that I am very good at managing and alternating things my way. So here is what I made as my munching snack while watching my favorite series ‘The Walking Dead’ and ‘Revenge’. (Who needs those high carb popcorns and chips!!! ;D )

I generally make these green chips with Kohlrabi leaves but have made the same many a times with Cauliflower greens too.

What is Kohlrabi?

Kohlrabi is called Kashmiri Kadam and Ganth Gobhi too and is a storehouse of nutrition. In a single serving, the greens have nearly 50% of the daily value of Vitamin A and 20% of the Vitamin C. It is found to be rich in dietary fiber, carotenoids, vitamins A, C, K and the B vitamins. It protects against colon and prostate cancer as it is rich with various anti-oxidants.

Besides the vitamins, this vegetable is also rich in calcium, potassium, iron, phosphorus, manganese and copper. Because it has rich potassium content so Kohlrabi is useful for keeping blood alkalinity that in turn helps many ailments.

Health Benefits of Kohlrabi

Its high anti-oxidant , potassium and phosphorus levels helps in fighting asthma, lung problems, cancer, high cholesterol,  indigestion and skin problems. Drinking kohlrabi juice after cardio exercises reduces risks of heart related problems. Kohlrabi inhibits the conversion of sugar and other carbohydrates into fat, definitely a better way to lose weight

Now coming to my green chips.

Low Carbs Green Chips Recipe

Wash kohlrabi greens well under running tap water and pat dry. If you want to chop them you can but let the leaves remain as they are.

Divide leaves in two batches and spread inside microwave. Micro high for about 10 minutes (time is proportional to the power of your microwave.) The leaves should not burn but be crisp and dry. (Keep an eye on the leaves for the first batch they should not catch fire, as for the subsequent batches you will have an idea about the duration.)

Take out your green chips from microwave when dried crisp and sprinkle some chat masala on them. Let them cool. Now switch on your favorite movie or TV program and enjoy your crisp green chips.

You can have these with some low carb vegetarian Mayonnaise and strawberries too

These chips are very low carb and high fiber. So you can just make them and store in a dry container. Aah!! By the way I just polished off my last batch of green chips while writing this post
