Navratri Special Low Carb Coleslaw Recipe

Like every year this year too I am fasting during Navratri. Nine days of self control and clean eating. Since I don’t eat any grains and even those Kuttu Atta goodies with carb loaded potatoes and Sago so its important for me to eat something filling yet healthy. As we all know by now that staying very low carb is not possible on a vegetarian diet, so Navratri time can be very easily made into low calorie diet time. Still I manage to go as low as possible on carbs.

So last night to break my fast this is what I prepared.

Healthy Coleslaw Recipe

Ingredients

  • Cabbage finely shredded 200 gm
  • Carrot grated 100 gm
  • Cucumber 100 gm
  • Paneer (cottage cheese) crumbled 28 gm (1 oz)
  • Yogurt drained or very thick 2 tbsp
  • Salt to taste
  • Spinach puree 2 tsp
  • Pepper powder ½ teaspoon
  • Apple chopped thin small pieces 100 gm
  • Pear thinly chopped pieces 50 gm
  • Lemon juice few drops

Step 1

Crumble the paneer and place in a blender with the drained yogurt, spinach puree, salt, pepper powder. Blend well. Process till smooth.

Place the shredded cabbage in a bowl. Add the salt, lemon juice and grated carrots and mix well.

Step 3

Add the apples, cucumber, pears and pomegranate. Add paneer and curd mix as dressing and toss well. Serve at once as it might become watery after sometime as cabbage leaves water.

So as you too can analyse that it is a bit higher on carbs but very low on fats and good enough with fiber content. In fact on second thoughts, when you are fasting 26-7=19 gm carbs in a complete meal is not that bad. Isn’t it? And yes let me tell you, this one serving was just TOOOO much with a glass of butter milk made with two tsp of curd.

One last thing to be added is that its a wonderful snack for Diabetics too.
